Ingredients

  • 1 lb frozen tater tots
  • 1 cup breakfast sausage cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup bell peppers diced
  • 8 large eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Spread the frozen tater tots evenly in the bottom of the baking dish.
  • Sprinkle the crumbled breakfast sausage, shredded cheddar cheese, and diced bell peppers, over the tater tots.
  • In a separate bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  • Pour the egg mixture evenly over the tater tot mixture in the baking dish.
  • Gently press down on the ingredients to ensure the tater tots are submerged in the egg mixture.
  • Bake the casserole in the preheated oven for about 45-50 minutes, or until the center is set and the top is golden brown.
