Prepare the sweet potatoes by washing them, pricking them with a fork, and baking them in the preheated oven for about 45-50 minutes, or until they are tender when pierced with a fork. Allow them to cool, then peel and mash them.
In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, eggs, evaporated milk, melted butter, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until all ingredients are well combined, and the filling is smooth.
Place the pie crust in a 9-inch pie dish and crimp the edges as desired.
Pour the sweet potato filling into the prepared pie crust.
Bake in the preheated oven for 45-50 minutes, or until the pie is set and a toothpick or knife inserted into the center comes out clean.
Remove the pie from the oven and let it cool completely on a wire rack before serving.
